- GRAPES: 92% Carménère, 8% Petit Verdot.
- AGING: 18 months in French oak barrels.
- PREPARATION: Manual harvest; selection and destemming of the bunches; further selection of grapes; maceration at 10 ° C for 7 days; fermentation with selected yeasts for 12-15 days with a temperature between 26 and 29 ° C; maceration in contact with the skins; separation of the wine from the skins.
TASTING NOTES:
- View: Dark red, purple.
- Nose: Notes of black fruit (plum, blueberry, blackberry) and spices; sweet background with touches of dark chocolate and coffee.
- Mouth: Intense and full-bodied, with ripe tannins that give compactness and structure.
PAIRING:
Red meat, beef, roasts, grilled meats, game, lamb, spiced meats, cheeses.
